Fresh Vegetable Potato Soup
Ingredients
2 cups diced potatoes
1 cup boiling water
2 teaspoons salt
2 cups milk
¾ cup sliced fresh snap beans
½ cup sliced fresh carrots
½ cup sliced celery
½ cup onion rings
1 cup hot chicken or vegetable broth
¼ teaspoon black pepper
2 tablespoons melted butter
Instructions
- Cook potatoes, water and 1 teaspoon of salt in covered sauce pan until tender. Mash until fluffy.
- Add milk to the mashed potato mixture and mix well.
- Cook the snap beans, carrots, celery, and onions with 1 teaspoon of salt and chicken or vegetable broth in a separate covered saucepan until tender, 12 to 15 minutes.
- Blend the vegetable mixture with the potato mixture.
- Stir in black pepper and butter.
- Serve hot.
