Fresh Vegetable Potato Soup

Ingredients

2 cups diced potatoes
1 cup boiling water
2 teaspoons salt
2 cups milk
¾ cup sliced fresh snap beans
½ cup sliced fresh carrots
½ cup sliced celery
½ cup onion rings
1 cup hot chicken or vegetable broth
¼ teaspoon black pepper
2 tablespoons melted butter

Instructions

  1. Cook potatoes, water and 1 teaspoon of salt in covered sauce pan until tender. Mash until fluffy.
  2. Add milk to the mashed potato mixture and mix well.
  3. Cook the snap beans, carrots, celery, and onions with 1 teaspoon of salt and chicken or vegetable broth in a separate covered saucepan until tender, 12 to 15 minutes.
  4. Blend the vegetable mixture with the potato mixture.
  5. Stir in black pepper and butter.
  6. Serve hot.
