October: Featured Meal Side Dish

Tossed Green Salad goes with Spinach Pesto Pasta

Ingredients

1 small head Romaine lettuce, washed and torn into pieces
1 tomato sliced into 8 wedges
1 cup broccoli, chopped
5 radishes, sliced
1/4 cup chopped onion

You can add practically any vegetable to a salad.  If you don’t have radishes, use carrots.  No broccoli, try cauliflower.


Instructions

  1. In a large bowl toss together all ingredients.
  2. Add a small amount of your favorite low calorie salad dressing and serve immediately.

Yields about 8 servings
