Lemony Green Beans with Mini Veggie Pizza

Ingredients

1 pound green beans, trimmed and cut into 2-inch pieces
1 1/2 teaspoons fresh lemon juice
1 teaspoon olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Instructions

  1. Steam green beans, covered, 5 minutes or until crisp-tender. Drain and return to pan.
  2. Add juice, oil, salt, and pepper; toss to coat. Serve immediately.

Yields 4 servings (serving size: 1 cup)
